Garden of Eatin' Recipes

Chapati & Bean Spread Roll-Ups

1 (15-ounce) can Westbrae™ Garbanzo Beans, rinsed and drained
3 green onions, cut into 2-inch pieces
1 clove garlic, mashed
1/3 cup Hain Pure Foods™ Safflower Mayonnaise
1 teaspoon lemon juice
1/4 teaspoon each Hain Pure Foods™ Iodized Sea Salt and pepper
1 (8-ounce) package Garden of Eatin’® Chapati, warmed in the microwave
Shredded lettuce, chopped roasted red peppers and sprouts

1. In a food processor, place garbanzo beans, green onion, garlic, mayonnaise, lemon juice, salt and pepper. Process until mixture is combined and as smooth as desired.

2. Spread bean mixture onto Chapati. Top with lettuce, roasted red peppers and sprouts. Roll up and serve.

Serves 6.
