Goat Cheese & Spicy Walnut Quesadillas

1 tablespoon Hain Pure Foods™ Canola Oil
1 1/2 teaspoon chili powder
1/2 teaspoon Hain Pure Foods™ Iodized Sea Salt
3/4 cup chopped walnuts
1 (10-ounce) package Garden of Eatin’® Whole Wheat Tortillas
12 ounces goat cheese
6 tablespoons thinly sliced green onion

1. Preheat oven to 400F. In a small skillet, over medium heat, heat oil. Stir in chili powder and salt. Add walnuts and stir well to coat. Stir over medium heat until nuts are lightly toasted. Remove from heat and set aside.

2. Spread 2 ounces of goat cheese onto each tortilla. Sprinkle with 2 tablespoons walnuts and 1 tablespoon green onion. Fold each tortilla in half, pressing together slightly.

3. Place folded tortillas on an ungreased baking sheet and bake until heated through, turning over once, about 10 minutes.

4. Cut each tortilla into three triangles. Serve warm.

Makes about 6 snack-size servings.
