Fresh Mozzarella Sandwiches with Basil Vinaigrette
1/2 cup firmly packed fresh basil leaves
2 tablespoons Hain Pure Foods Balsamic Vinegar*
1 teaspoon garlic salt
1/2 cup Hain Pure Foods Canola Oil
1 (12-ounce) package Garden of Eatin’® Bible Bread
1 pound fresh mozzarella, cut into thin slices
12 sun dried tomatoes or 3 roasted red peppers, drained and cut into strips
1/4 cup pitted cured black olives
1. In a food processor, place basil, vinegar and garlic salt. Process until basil is chopped, scraping down the sizes if necessary. With the processor running, slowing drizzle in the oil.
2. Open each Bible Bread and spread with basil dressing. Fill with mozzarella, tomatoes and olives.
*For a different flavor, try Hain Pure Foods Red Wine, White Wine or Apple Cider Vinegars
