Spicy Vegetable Sandwiches

1/2 cup Hain Pure Foods™ Safflower Mayonnaise
3 to 4 tablespoons prepared horseradish, drained
1/8 teaspoon pepper
1 (10-ounce) package Garden of Eatin’® Low Salt Bible Bread
2 cups torn arugula or watercress
1 cup shredded carrots
2 tomatoes, thinly sliced
1 cucumber, thinly sliced
1 small red onion, thinly sliced

1. In a small bowl, combine mayonnaise, horseradish and pepper.

2. Open each Bible Bread and spread with mayonnaise mixture. Stuff with arugula, carrots, tomato, cucumber and onion.

Serves 6.
